Because the outer layer of the blade is made of extremely soft stainless, it’s so easy to sharpen on your demand, and also its traditional core steel provides us with sensitive cutting touch. Note: The edge is easy to get rusted, if the blade is not properly cared.

It’s the common oxidized metal color with the forged oxide iron skin known as Kuro-uchi traditional blades. In another words, Tosa-Ichi Shadow is the corrosion-resistant armored “Neo Kuro-Uchi“.

Shirogami 2 steel is a carbon steel made from iron sand-based raw materials and containing extremely few impurities that would be detrimental to the performance of the steel.
It is a common steel used for kitchen knives, machetes, and many other blades, but its quality is high, and the less impurities it contains, the more difficult it is to control the hardening temperature and the more skillful the processing is required.
Compared to aogami steel, shirogami steel can be more easily resharpened with a whetstone, has a primitive sharpness that cuts through food, and is easy to handle even for ordinary households.

Tosa-Ichi Saiun uses Shirogami No. 1, which is highly regarded as the best cutting steel among these carbon steels, and its extremely sharp blades are ideal for cooking that requires delicate cutting.
In addition to having the highest carbon content among the Shirogami group, the low level of impurities makes it difficult to control the temperature of heat treatment, but we have overcome this issue by the specifically developed cooling tank, which maximises the performance of the steel.

Yasugi shirogami 1 steel used in this series is one that can achieve the most delicate cutting performance among carbon steels. It has a reputation for the beautiful cross section of the cut food, and is favored by many top chefs.
It is made using a recipe that further increases the carbon content from shirogami 2 steel, making heat treatment difficult, but we have adapted a specifically developed cooling tank to achieve stable mass production.
